  1. Combine the almond flour, tapioca flour, 1/4 Cup of the Parmesan cheese, salt, pepper, and Italian seasoning in a shallow dish.
  2. Beat the eggs in another shallow dish.
  3. Heat a large skillet on the stove to medium-high heat and melt the coconut oil.
  4. Dip the chicken in the eggs and then cover it with the flour mixture.
  5. Add the chicken to the hot skillet and leave it alone for 4-5 minutes. Flip the chicken and cook it on the other side for an additional 4-5 minutes.
  6. Pour the marinara sauce over the chicken and top it with the mozzarella and remaining Parmesan cheeses.
  7. Cover the chicken and cook until the cheese melts.
  8. Serve the chicken over the pasta of choice or a bed of spinach.
