Healthy Slow Cooker Chuck Roast

  1. Combine salt, pepper, rosemary, thyme, cumin, paprika, garlic and 1 T balsamic vinegar to make a paste.
  2. Rub roast with spice mixture and brown on both sides in avocado oil.
  3. Spray the inside of your slow cooker with non-stick spray. Dice carrots and sweet potatoes and add them to the slow cooker.
  4. Top vegetables with meat and add sliced onion and diced tomatoes.
  5. Pour in beef broth and remaining 2 T balsamic vinegar.
  6. Cook on low for 8 hours
  7. Shred and serve.
