  1. Preheat oven to 400 degrees.
  2. Toss vegetables in avocado oil, salt and pepper and add to a sheet pan lined with parchment paper. Roast for 30 minutes.
  3. Add cooked veggies to Instant Pot (or slow cook on low for 4-6 hours or boil on the stove for 20 minutes), along with vegetable broth and curry powder. Set cook to “manual” and adjust time to 5 minutes. Once cooking is complete, release pressure naturally or manually.
  4. Using an immersion blender or a high powered blender, puree soup until it’s completely smooth.
  5. Stir in coconut milk and any extra salt and pepper to taste.
