Low Carb Chocolate Chip Cookies

Aw College. The days of staying up too late, listening to music way too loud, and of course, eating junk every day. Life changed forever when my roommates and I discovered the 1-1-1 peanut butter cookie recipe. The 1 cup sugar, 1 cup peanut butter and 1 egg cookies we made 2-3 times a week about about 11 p.m. We’d eat about half the dough and bake the other half to eat while we watched movies about Julie Roberts finding the love of her life… again. It was magical.

For some strange reason, I can no longer get a way with that lifestyle. If I’m being honest, it didn’t work out too well at the time, but since there are much worse things I could have done being on my own for the first time, I won’t feel too guilty about it. The point is, I love cookies. Even though I eat tons of veggies, drink green smoothies, eat grass-fed meat, and work out daily, I STILL WANT COOKIES! I don’t believe in a life that doesn’t involve treats. But I have to be careful with my treats. I’m so sensitive to sugar and right now eggs and I aren’t friends. So I knew I couldn’t use my old, go-to pb cookie recipe. I needed to re-vamp. I’m very happy with the results.

I decided to go with tahini instead of peanut butter for a more neutral taste, but feel free to use any nut or seed butter. Almond butter, peanut butter or sunflower seed butter would work just as well. Since all nut butters have a different fat content, the texture will vary a bit, but you’ll still end up with a delicious cookie.

These are only low-carb if you use a sugar alternative. The only sugar alternatives I’m a fan of are stevia, monk fruit and erithrytol. This Lakanto sugar substitute is my favorite! And now they sell it at Costco!! I also use Lily’s Chocolate Chips instead of regular. They are sweetened with stevia and are SO YUMMY! Be careful though. If you are sensitive to milk, the only diary free ones are the dark chocolate chips. We also love Enjoy Life chocolate chips for regular (not sugar free) baking. So if you don’t care about the carbs and just want a whole-foods cookie, feel free to use coconut sugar or raw cane sugar; and the Enjoy Life chocoalte chips.

I store these in the freezer because I know myself well. If they are on the counter, I’ll go back to my college days and eat the entire pan. Now I have a cookie in the freezer to celebrate moments like birthdays, holidays, or making it through the day without my head exploding. What do you celebrate with cookies?

Gluten-Free Vegan Chocolate Oat Bars

My 8-year-old daughter loves to cook. Like… LOVES to cook. There are days I open my fridge and it looks like a science experiment exploded.  It’s full of glass containers of “salad dressing,” “spice dip,” “flavored water,” and “soup.”


That face represents the pride that comes when you design and make your own oatmeal.

Yesterday, I couldn’t find my cocao powder in the pantry and rather than think I was going insane and skipping over it with my eyes (which I do regularly), I knew better. I asked my daughter, “Do you have my cocao powder?” She immediately ran up to her room and brought down a reusable grocery bag full of spices, crackers, marshmallows and… my cocao powder. Just an average day in our house.

She even delivers!!

We watch “The Pioneer Woman” together, read cookbooks before bed, and she’s a big fan of helping me meal plan. She claims she’s going to be a chef… right before she’s a teacher, but after she’s a waitress and an author. Astronaut and veterinarian are in there somewhere as well, but I can’t remember the exact order. Ambition, right?

So last week she brought me a picture of some oat bars and proclaimed she was going to make them for dessert. We tried to find a promising recipe, but in our house, to make food we can all eat it has to be gluten-free, dairy-free, egg-free, and refined-sugar free.

Together, we came up with this recipe and it’s a hit! It’s easy enough my 8-year-old could “make it” (I helped a bit), it comes together fast, and is customizable and really yummy.

We used almond butter because that’s what my daughter chose, but you can easlily change the flavor by changing the nut butter. I wanted peanut butter because the combination of peanut butter and chocolate yields a result even more beautiful than if Henry Cavill and Scarlett Johansson had a baby. Am I right!? But this was her thing, so I let it go. Next time!

The flavor is also influenced by the type of sweetener you use. Using coconut sugar will give it a more carmely flavor, maple sugar more of a maple flavor and raw sugar just a sweet flavor. We actually used Lakanto Monk Fruit sweetener because I have to keep my sugars (even natural ones) really low right now.

Because she’s all about the bling, we had to add something on top. She wanted 3 different kinds of chocolate, edible glutter and several types of candies. We settled for one type of chocolate, and one type of candy that happened to come in three different colors. I think she was satisfied.

So when my daughter is a famous TV chef, we’ll look back on this post and laugh. Or at the least, when my daughter has a daughter 0f her own who steals all her ingredients, hides food in her room until it’s moldy, and uses half a bottle of safron to make her mac-and-cheese look pretty, we’ll laugh. Or I’ll laugh… a lot… maniacally.

Healthy Disneyland “Dole Whip”

We’re those people who would rather take a vacation to Disneyland than anywhere else. Sure I’d like to spend a week at a beach house someday, but at the expense of a Disneyland vacation?? It’s not going to happen.

We have a lot of Disneyland traditions. We have to ride Pirates of the Caribbean every day we’re there, we always ride Big Thunder at night during the fireworks, and we get one treat a day. I’m all about balance so that treat can range from a gluten-free, vegan treat, to a sugar-filled cookie.

One of our favorite treats is a Dole Whip from the Tiki Room. This may be the only treat we can all agree on in Disneyland. And while they’re full of sugar and probably several ingredients I can’t pronounce, they are gluten, dairy and egg free!! That makes me happy since it makes the indulgence less rough on my body.

If you haven’t had a Dole Whip, it’s a pineapple ice cream served soft-serve style. That’s it. It’s simple but so tasty!! You even have the option of a “Dole Whip Float” which includes putting the pineapple soft serve in pineapple juice. Also amazing!

That said, when we come back to the real world and actually care about what we eat, we still want the delicious Dole Whip. After several experiments, we’ve come up with the perfect recipe!

Depending on your food sensitivities, you can make these totally vegan or with dairy. We prefer to use a full-fat, low-sugar, grass-fed yogurt because it’s so thick, but feel free to use coconut, almond or cashew yogurt instead. We like Siggi’s Vanilla yogurt because it’s super low in sugar, extra creamy and adds the perfect vanilla flavor. Sadly, I can’t eat dairy so I use So Delicious Coconut yogurt when I plan to eat one.

We’ve experimented with freezing these as popsicles, scooping the mixture into bowls, and pouring it into freezer pop molds. My kids prefer the freezer pops, as do I to cut down on the mess. But any way you make them , they are delicious!

Whenever we use freezer molds, we put them upright in glasses or jars to freeze them. That keeps the liquid level as it freezes. Ones they’re frozen, it’s fine to stack them on their sides in the freezer.

Now if we could just figure out a way to bring our favorite rides into our home, we’d be set between vacations!!

Avocado Lime “Everything” Sauce

I have a confession. When I was young, I did not like avocados. Saying that now makes me want to shake the shoulders of my younger self, but it’s true. I still remember the day I tried avocado again. I was at a pizzaria in Idaho and for some reason I decided to order the pizza with avocado. I wasn’t even pregnant, so the random compulsion to eat an avocado was completely out of the blue. I was hooked! I’m not sure why I didn’t like avocados before. It may have been my form of childhood rebellion (my parents are so lucky). Who knows? But I’m thankful I tried an avocado that day.

Now I eat avocados in every way possible. I make them into pudding and frosting, puree them in smoothies, eat them on toast, make them into guacamole and now this perfect sauce.

I call this an “everything” sauce because it fits to well with everything. We’ve used it as a spread for a sandwich, a salad dressing, a chip dip, on top of a burger, and a meatball dip. It’s so versatile! It’s like the little black dress of sauces.

This weekend we went to a restaurant and I sneaked in a jar so I didn’t have to deal with restaurant dressings loaded with unhealthy fats and sugars. Yes, I’m that woman who carries sauces in her purse. I used to make fun of my mom for bringing her no-calorie spray salad dressing to restaurants. Remember those dressings?! I’m so glad we’ve moved beyond that.

Let’s talk about juicing limes for a bit. I love lime juice but limes are often stubborn and don’t want to give up their juice. Here’s the secret. First, warm up your limes. I usually stick them in the microwave for 20-30 seconds. Once they’re warm, roll them on the counter with your hand to loosen them up a bit. This is the only way I get limes to give me their juice.

However you decide to use this sauce, I’m sure it deserves a place in your fridge.

Thai Cauliflower Fried Rice

My husband travels a lot for work. While I miss him a lot, there are some things I take advantage of. I watch movies like “Pride and Prejudice.” I don’t have to worry about us waking each other up at night. But my favorite part is the food. I can make food he refuses to eat. And I do. Last week he was out of town and I made this delicious cauliflower fried rice. My husband thinks cauliflower is a horrible addition to any meal, so I usually save it for snacks and lunch, or serve it on the side.

This dish did not disappoint. It was full of both flavor and nutrients. While I’d still rather have him home, this definitely softened the blow.

The key to this dish is to dice all the veggies small and cook it in stages. Start with the heartier veggies and work your way up to the softer ones so everything cooks evenly.

And can I talk about this sauce. It’s so amazing. As I’ve mentioned before, I’m on a candida cleanse and can’t have anything fermented. That means no coconut aminos or gluten free soy sauce. That has been really hard but this sauce is a great substitute. You can definitely use 1/4 C coconut aminos instead of the water to up the flavor, but it was still incredible with the water.

This is also versatile based on what you have/like. We used leftover pork chops for the protein but this would be great with chicken, ham, steak or any ground meat. We just always got ham fried rice growing up, so fried rice and pork seem to be the perfect combination to me.

Sadly, my husband has a few more trips coming up before summer. The good news is, this dish will get to make more appearances as I plan to have it every time he leaves town.

Easy Salmon Bowls

I have a confession that may get me kicked out of the healthy community. I do not particularly enjoy eating fish. I am okay with white fish, but I don’t love salmon (one of the healthiest fish due to its higher fat content). Fish provides Omega-3 Fats, which help our heart and reduce overall inflammation. A word about buying fish. ALWAYS buy fish labeled “wild-caught.” This means the fish was taken from its natural habitat after eating its natural diet. “Farm-raised” fish was raised in large groups and fed using grain by-products. This makes farm-raised fish richer in Omega-6 fats which we already get way too much of in the standard American diet.

Because I realize how much I need fish in my diet, I’m always looking for a way I can eat salmon and enjoy it. One thing I do love is Asian food. I decided the best way to eat salmon was to give it some Asian flavor. These salmon bowls are DELICIOUS! They come together really fast and are easy to customize. I love meals like this because I don’t have to try to please everyone. I put out the toppings and everyone can just add what they like. These are also great for company for that exact reason. When I eat these bowls I can honestly say I love salmon.

If you’re going to use rice, start it cooking first.

Then start working on the salmon. I’m not willing to spend a lot of time cooking dinner so I love to cook fish in the oven. I don’t want to have to watch a pan. After it cooks, the salmon easily flakes away from the skin in bite-size pieces. If you REALLY don’t like salmon, you can make this with any fish. Shrimp would be DELICIOUS (a fish I actually do love to eat). Just remember to look for that “wild-caught” label.

 

While the salmon cooks, prep all your toppings. There is really no wrong way to do this. We use cucumber, carrot, red pepper, spinach, cilantro and avocado but if you want to use something different, go for it.

Then make the sauce. I love this sauce because it only requires one bowl and no cooking. Make and store extra for salad dressing. I like to use tahini, my husband likes peanut butter. Either is delicious. You can also use almond butter or really any nut butter you have on hand. Don’t go out and buy something if you have ingredients that work.

Now just build your bowl how you like it. I like to add a scoop of rice a huge handful of spinach, one whole flaked salmon fillet and then top it with my veggie strips. Then I just drizzle the whole thing with the sauce. My family members pick the veggies they like so there’s not complaining about not liking certain ingredients.

And that’s it! Dinner is ready! Enjoy your fish!!

Sugar Detox Sloppy Joes

1969. It was a big year the world. Richard Nixon became president, man walked on the moon and Hunts came out with a can of deliciousness called Manwich. Yes, Manwich. Just add ground meat and you have yourself a delicious sloppy joe. I grew up with this stuff. We kept it on hand a long with emergency water and matches in case of power failure. So when I got married and started my own family, I knew I had to stock up on the Manwich.

Sadly, life changes. Richard Nixon resigned after questionable activity, NASA had budget cuts and had to put an end to the Apollo missions, and I read the label on the back of a can of Manwich. The second ingredient listed is high fructose corn syrup, followed by regular corn syrup. A few ingredients later we have sugar and down the list we have ingredients with a breakdown that include high fructose corn syrup, corn syrup and sugar. That’s one giant crash for mankind, Manwich.

Yet if we learned anything from Adam Sandler and Chris Farley, it’s that sloppy joes are awesome. So something had to be done.

What I came up with was a delicious, healthy, saucy mixture to go with my ground beef for a sloppy joe that puts Manwich to shame. Eat your heart out, Manwich! But first, drizzle a little high fructose corn syrup over it.

The key is to let the ingredients simmer together.

After you brown your beef and onion, add the liquids and spices and let the whole mixture simmer together for 20 minutes. One of the ingredients in this recipe is that amazing bone broth I told you to make a few weeks ago. Now it’s even healthier than before.

We sometimes have this on whole wheat buns, but my favorite way is to scoop some into a lettuce cup. The crunch pairs nicely with the meat.

My husband and kids eat this with shredded cheese on the top, but dairy makes my hand beak out in eczema like I have a zombie hand, so I pass on the cheese.

Now if I could just find another way to put man on the moon…
