No-Sugar Saucy Asian Meatballs

When I first started eating healthier, I wasn’t sure what to eat. I had meat and veggies seasoned with salt and pepper. This is a delicious meal but after a few weeks, I was pretty darn sick of it. That’s when I started experimenting with seasonings. Eating healthy is actually really easy if you figure out how to add flavor to food. Sometimes we feel like eating healthy has to be miserable. Good news. It doesn’t!! These meatballs are proof. They are so yummy! My husband and kids loved them and these are people who order things like chili cheese fries and shakes at restaurants, so that’s quite the compliment. Plus, these are easy to make. These days I’m really lazy with cooking. If it takes me more than 20 minutes active time to cook, I’m out.

The only chopping in this recipe is the green onions. To add to my laziness, I cut these with kitchen shears rather than chop them with a knife and cutting board. Add the onions to a large bowl.

Add in the seasonings, coconut aminos, and sesame oil.

Mix this all together before adding in the meat. This keeps the meat tender.

I make my meatballs about the size of golf balls but make them whatever size works best for your family. Just be sure to increase bake time for bigger meatballs and decrease it for smaller ones.

I bake these in the oven for about 15 minutes.

The sauce was the easiest part.  Because it’s such a small amount I didn’t want to dirty a saucepan. I mixed it together in a glass dish and microwaved it for two minutes. It doesn’t get much easier than that.

Then I just tossed the meatballs in the sauce and sprinkled them with sesame seeds.

You could eat these over rice or rice noodles (if you do, I’d double the sauce), but we just ate them plain with some veggies and cheese on the side.

Healthy, Easy Cowboy Salsa

This is a recipe my mother-in-law made at a picnic. It’s so much better than a jarred salsa. It’s perfect with tortilla chips or crackers, but all I need is my face and the bowl. YUM!!!

In a colander, drain and rinse:

  • 1 can corn
  • 1 can black beans (I thought I had black beans and didn’t, so I used a can of pinto beans instead, which was also delicious. Despite my husband’s original claim that pinto beans are just a cheap imitation of black beans, he enjoyed it with the pinto beans as well).

Put the beans and corn in a large bowl and add:

  • 6 or 7 chopped roma tomatoes – They key to this part is to get the tomatoes about the same size as the beans and corn.
  • 1/2 bunch cilantro, chopped
  • 4 or 5 green onions – The easiest way I’ve found to chop green onions is to clip them with kitchen shears, similar to how you clip chives.

Toss this mixture together.

Then in a small bowl, combine:

  • 1 package powdered Italian dressing mix
  • the zest of one lime (this is optional, but I think it makes it even better!)
  • the juice of two limes

Pour this mixture over the salsa and toss. Cover the bowl and put it in the fridge so all the flavors can combine.

Creamy Cauliflower Soup

I love to trick my family by adding healthy things to their food. I add beans to their brownies, avocado to their frosting and now cauliflower to their cheese soup. I gave them the soup, listened to them “ooh” and “aah” and never said a word about what was in it. Mwa ha ha! I love the small victories.

Start by steaming the cauliflower. I got this lovely steaming basket at Ikea years ago. It’s one of my favorite kitchen tools because it fits in any pan and is dishwasher safe.

While the cauliflower steams, cook the onion and garlic in the butter and avocado oil. Do this right in your soup pot. Add the salt, pepper, almond milk and chicken broth and heat this all together.

Add the steamed cauliflower and puree with an immersion blender. I love my immersion blender for the same reason I love my veggie steamer. It’s extremely versatile and dishwasher safe.

Add the cheese and continue to cook the soup until the cheese melts.

Top each serving with green onion, turkey bacon and more cheese.
