Egg and Veggie Stir Fly
A healthy power breakfast packed full of flavor and nutrients.
Chopped Bell Pepper
Salt and Pepper to Taste
Heat Oil in a large skillet.
Add onion and garlic and cook until onion is translucent.
Add pepper, zucchini, mushrooms and cauliflower. Add plenty of salt and pepper and cook until tender.
Slice cherry tomatoes in half and add to pan. Cook until tomatoes are slightly slivered and they release their juices.
Move veggies to the side and add three beaten eggs.
Season eggs with a bit more salt and pepper and cook them until done before stirring in vegetables.
