  1. Preheat oven to 350 degrees.
  2. Grease a 9×13 pan with butter.
  3. Mix all the ingredients for the cake in a large bowl using an electric mixer until the better is smooth.
  4. Pour the batter into the prepared pan.
  5. Combine the cocoa powder and the coconut sugar to make the topping.
  6. Sprinkle the cocoa/sugar mixture over the top of the batter.
  7. Pour the boiling water over the cake.
  8. Bake for 20-25 minutes or until the top is set and the middle is still gooey.
  9. Top with ice cream, whipped coconut cream or whipped cream.
