  1. Heat Avocado Oil in large skillet.
  2. Add Chicken breast, salt, pepper and 1/2 tsp ginger and brown on all sides.
  3. Add onion and peppers and cook until onion is transparent.
  4. Add zucchini and garlic and cook another two minutes.
  5. Add sesame oil, coconut aminos, remaining 1/2 tsp ginger and more salt and pepper.
  6. Cook until sauce thickens and serve over spinach.
